I love it when a plan comes together and we actually did a pretty good job following the dinner menu last week (but not so good with breakfast)! After a super productive week getting stuff in the freezer two weeks ago, I took a break last week. This week, I need to get back at it. Evenings are getting busy as after-school activities start in full swing and food in the freezer helps keep us eating healthy, not to mention spending less money.
So here’s the weekly plan:
Breakfasts:
Cereal & apples
Yogurt & Pumpkin Pecan Granola (Thanks, Amy, for the idea!)
Slab apple pie (didn’t make this last week either) – extra for the freezer
German Pancakes with Homemade Buttermilk Syrup
Pumpkin, Chocolate Chip Muffins (made with mixes from my freezer)
Lunches:
Tortilla Wraps (extra tortillas for meals this week and the freezer)
PB & J, and veggies
Egg Salad Sandwiches
Grilled Cheese with Pesto & Tomato
Left overs
Dinners:
Chicken Pot Pie (two extras for the freezer)
Grilled Burritos – sort of like these
Spinach Mozzarella Meatloaf (extra for the freezer)
Chicken & Rice Soup with Crusty Bread & Cheese and Apple Crisp
That’s it! We’re supposed to be heading to Wisconsin for a fun weekend with good friends. That makes for easy meal planning!
I also need to make a double batch of Artisan Bread dough this week!

I love your blog! I’ll have to spend some time going through it. A friend of mine shared the recipe for Artisan Bread. I love fresh bread from the oven at home. I still have yet to make the artisan bread though! Visiting from over at MPM.
Thanks, Tracey! I bake all of our bread. Nothing beats it!! I also have the recipe for Artisan Bread on my blog and I’m adapting it to freshly milled flour. Still tweaking a bit, but I will share it once I figure it out!
This sounds wonderful! I make spinach mozzarella meatloaf myself. My hubby never liked meatloaf til he tried mine. I love the smell of fresh baked bread and think I’ll be trying out the Artisan Bread recipe. I made my first batch of fresh banana bread last week and I can’t believe how easy it was! This puts my menu plan to shame.

I had someone comment on my menu last week with her menu. Cara – if you read through the comments. I thought HER menu put MINE to shame…
Cilantro Lime Cabbage Slaw (great for beef or chicken tacos… AWESOME in fish tacos):
Thin shredded green or purple cabbage. I used 1/2 of a leftover head.
Handful of fresh chopped cilantro
2 Scallions sliced
make a dressing using:
the juice of 1 lime, get crazy and the zest that bad boy as well!
1/4 cup oil
sugar to taste, I used about 2-3 tsp.
salt and pepper to taste
1 tsp. cumin
Toss with cabbage slaw and throw over any taco. This brings a fresh tropical flavor that is just to die for!!

Breakfasts:
Toast with Peanut Butter and Honey
Pumpkin Pancakes (from freezer)
Cereal and Fruit
Baked Oatmeal
Overnight Cinnamon Rolls
Dinner:
Chicken Noodle Casserole
New England Boiled Dinner (Still trying to use the leftover HEADS of cabbage from last week)
Broccoli Cheddar Soup (new recipe from my food network mag. made with russet potato, sweet potato, broth, and only 1 cup of cheese. Turned out SOOO good! Actually tasted VERY cheesey, and the potato made it so filling!)
Steak Gyros
Curry Chicken Wraps
Ham Jambalaya (using leftover meat from our boiled dinner)
Football Day with family. LOTS of dips, spreads, chicken wings ect.
Freezer Cooking:
Pumkpin Pancakes
Blueberry Crumble Muffins (HOLY COW!! The BEST muffins we’ve ever had!!)
Pitas
Bread
Monkey Munch
Ok, now I’m starving! Everything sounds just wonderful. I have GOT to get together so I can jump on the freezer cooking wagon train. I don’t know why it seems so overwhelming to me.
