Weekly Menu & Freezer Cooking Plan 9/12

I had a busy, productive week last and put quite a few meals and meal components in my freezer! I’m really excited and need to keep the momentum going.

Here’s my plan:

Breakfast ~
Monkey Bread & fruit – my freezer experiment worked really well! Sharing recipe and details tomorrow.
German pancakes
Waffles (extra for the freezer)
Smoothies & Toast
Slab apple pie – Granny’s apple trees are almost ready! (extra for the freezer)
Cereal & fruit
Crockpot French Toast Casserole

Lunch ~
Leftovers x 2
Bean burritos (extra pintos beans for the freezer)
Grilled Cheese & Pesto (still need to make pesto)
Baked Potatoes with veggies & cheese
Ham sandwiches
PB & J

Dinners ~
Out – extended family birthday party
Spaghetti Bolognese & salad
Stir Fry w/ left over steak
Crockpot Chicken w/ black beans and salsa, rice, broccoli – extra black beans for the freezer
Grilled salmon and mashed potatoes (extra for the freezer – I have never done this but have heard it works?)
Black bean, corn & avocado Tostadas (still haven’t had these)
Homemade Pizza

My preserving / freezer cooking efforts from last week (sorry for the horrible picture – I didn’t realize it was so fuzzy until AFTER I put everything away.)

  • Frozen Shredded Zucchini
  • Canned Grape Jelly
  • Canned Marinara Sauce
  • Frozen Bolognese Sauce
  • Monkey Bread Dough Balls
  • Frozen Wheat/rye/flax bread
  • Not in the picture: 2 frozen Easy Lasagna Pasta Bakes

  2. I felt kind out of sorts this week… Didn’t write down a menu before shopping. Instead tried going by the sale flyers THEN planning my menu based on what I bought. Actually did very well shopping at 3 different stores, ALL with .5 miles of my house… TONS of produce for SUPER cheap.

    Breakfast-
    Baked Oatmeals
    Pancakes
    Eggs with toast

    Lunch-
    I keep trying to plan these.. BUT Jon is rebelling against my set menus when I’m at work.. SO, he is on his own…. I think we all know he’ll appreciate the set menu after having to do it on his own for a whole week… Good Luck Jon!!

    Dinner-
    Turkey Taco Night!!! Golly I just Freakin LOVE tacos!!
    Dinner with my parents for my birthday
    Couldn’t quite get over taco night.. SOFT TACO night it is!! I had 6 corn tort. in the freezer and 1/4 bag of tort. chips.. Kids got “haystacks” we got “soft tacos” Out of romaine. BUT, I got tons of cabbage on sale so I made a lime cilantro slaw.. OH gosh.. How can I EVER eat tacos without this slaw again?????
    Turkeu Shepards Pie
    BBQ Chicken w/ Corn and Cuke salad
    Asian Night!! Parents are coming over and we are all making Asian Dishes. I’ll make my Cabbage Tofu Dumplings and Cabbage Salad. YUM!!!
    Fully Loaded Burritos
    Eh… I’ll come up with something… :)

    Extra Cooking/Freezer Cooking
    Baked Oatmeals
    Energy Bites (using some leftover granola… GOSH! Better than the original recipe!!)
    Bread for the eek
    Monkey Munch
    Fruit salad bowl.
    Cut andfreeze fruit I got on clearance (grapes, mango, pineapple, kiwi, pears)
