I try to share the way I cook for the freezer in my weekly menu plans. Since I don’t really have time to devote an entire day or a weekend, I just double, triple, or quadruple meals. Sometimes I do it at breakfast, sometimes throughout the day, sometimes at dinner.
Here’s my freezer/pantry inventory at the beginning of October:
4 bags Muffin Mix
3 bags Scone Mix
2 bags Monkey Bread Dough Balls
6 bags – 7 cup portions Bolognese Sauce
3 bags Ground Beef Stroganoff
8 pints Grape Jelly
7 quarts Marinara Sauce
5 quarts Apple Sauce
1 Chicken Pot Pie
5 bags – 2 cup portions cooked Black Beans
3 bags – 2 cup portions cooked Kidney Beans
1 bag – 2 cups Black Beans mixed with 2 cups Kidney Beans (for quick Taco Soup)
3 bags Taco Meat & Beans
2 meals Lasagna Bake
3 loaves 100% Whole Wheat Bread
1 bag marinated chicken breasts
I also have the remainder of my 1/4 beef purchase, lots of quarts of corn, and many pints of shredded zucchini as well. I guess what I’m saying here, is that I only inventoried stuff I actually made in September, and not all the contents of my freezers!
I also made extra tortilla dough (but we ate it all), pizza dough (but we ate it all), and waffles (but we ate them all, too…)
. So, I guess I need to make more…
In October, I really want to focus on getting more bread, doughs, and meals with proteins other than beef in my freezer. I also have a bunch of apples left to process and 7 sugar pumpkins in my garden I will need to do something with as well! And black walnuts…we’re working through millions and millions of pounds of black walnuts. Will you please come get some so I don’t feel like I need to get them all myself???
If get all of that accomplished, I will feel better about my daughter going through surgery for hip dysplasia soon.

I’m envious of your inventory!! All we have are breakfast burritos in our freezer. They are super easy and Matt loves them for a quick breakfast before work.
what is you tortilla dough recipe?
I’ve been meaning to blog about this for a long time! Here’s the recipe: 3cups flour, 1 tsp salt, 1/3 c canola oil, 1 c warm water. Mix and knead. Divide dough into balls and let them rest for 1/2 hr. Then I make toritllas with my tortilla maker. I will blog about this very soon!! Thanks for your question!

I am so glad I found your site! I am working on baking more myself rather than relying on store bought items that are full of *od knows what.
You asked about chicken. I freeze breaded chicken breast strips with egg, and freeze for my kids.
And whenever I make taco meat, steak or plane chicken I make enough to set aside and freeze burritos. I stuff them with beans, cheese, onions and meat then just put them in the freezer. So much yummier when you make it yourself rather than buy expensive mush stuffed frozen burritos at the grocery store. My hubby loves having the quick meals on hand!
