The bad thing about having Thanksgiving somewhere else and not doing much cooking myself is that I have no leftovers to use up this week! I’m going to have to cook a turkey just so I can have leftovers now. I did not get my fill of turkey last week.
So here’s my menu:
Breakfasts ~
- Yogurt Parfaits (plain yogurt, frozen blueberries, & granola)
- Smoothies (Made in my new Vitamix!) & Toast
- Cereal
- Egg Muffins (extra to freeze)
- Pumpkin Muffins (extra to freeze)
- Scrambled eggs & ham
- Chocolate Chip Scones ( extra freezer mixes)
Lunches ~
- Black Beans & Rice (extra beans for the freezer)
- Grilled Cheese on homemade bread (extra bread for the freezer)
- Left overs
- Tortilla Roll-ups (extra tortilla dough for the freezer)
- Bean Burritos
- PB & J
- Out
Dinners ~
- Roasted whole chicken, loaded baked potatoes, no-mayo cole slaw
- Taco Soup (extra for a friend who just had a baby!), homemade corn bread
- Crockpot Roast with sweet potatoes & carrots
- Pan-seared Salmon with Tomato Basic Feta Sauce
- Homemade Egg Rolls & Egg Drop Soup
- Beef Stroganoff from the freezer
- Ham Quiche (extra for the freezer)

Ooooh, how do you make homemade eggrolls???? My family loves them (I, surprisingly, am not a fan. I think it’s the cabbage).
I’m not very good at the homemade egg rolls yet – but maybe I’ll get gutsy and blog about it anyway… I just follow the directions on the egg roll package!
I’m also wanting the recipe for eggrolls!! I usually make wontons/dumplings so I can steam them… I’m a failure when it comes to frying food…
I also really want to make that beef stroganoff!! I know I’ve already said I would, but I totally forgot until this post. I’m definatly putting it into my favorites so I don’t forget again!!
I’m totally slacking with my menu this week. Haven’t even posted it yet!! It’s mostly junk food as I’m totally ADDICTED to working on the kids homemade Christmas gift… Felt Food!! All I want to do is sit around and sew food toys!
Tonight wa chili dogs, the rest of the week is going to be a use it up kind of week. Tacos, Burritos, chicken noodles, ect.
I’ll try to have my menu in order next week… For now, I’m putting more effort into my felt food than I am real food. Sad I know… But I really think the kids will love it!! I post pictures after every food I make on my blog. Check it out!!
Oh felted foods!!! I’m checking it out. I’m working on a blog post on how NOT to be a crafter.
That would be me. I’ve bought wool sweaters from Goodwill lately and have felted them with the best of crafting intentions. But I have not gotten beyond that.
I’m jealous you have a Vitamix! Your menu sounds great. Beef Stroganoff is one of my favorites!
