Sauteed Cauliflower that 2 out 4 Kids Love!

Two of my kids love this cauliflower. The other two are going through a weird picky stage right now that has me in fits. They eat it because I make them, but I really don’t like making kids eat food. This recipe results in very delicious cauliflower. I hope you try it!

Here’s what you do:

Wash your cauliflower and cut off the leaves – try to remove some of the stalks but keep the cauliflower mostly togehter. Then cut it in strips:

Melt 3 Tbsp butter in a cast iron skillet:

Add first garlic and then onions, cooking until slightly caramelized (I should have taken this picture a few minutes later. The onions aren’t quite brown enough in this shot):

Then add the cauliflower and cook until it looks like the picture above! You may have to add more butter if the veggies look a little too dry. I added another couple of tablespoons to get the veggies to my liking. Finish everything off by adding sea salt and freshly ground pepper to taste.

  1. Mmm. That sounds so good! With Jon and I eating mostly Chicken and Veggies for dinner I’m looking for yummy ways to prepare them. Add a little excitement to them.
    Last night I made Lemon Garlic Broccoli. Toss florets in olive oil, salt, pepper, and minced garlic. Throw on a foil lined baking sheet, top with lemon slices. Cook in the oven at 425 until desired tenderness is reached. YUMMY!! The lemon adds a whole new level to plain ole’ broccoli.
