This week we’re continuing with our eat from the Pantry Challenge. I have no oil. I have no noodles. I have no peanut butter. I have no money. But we do have a lot of other food so I just have to get creative. Usually when I make my menu, it includes a small shopping list. This list can hopefully be cooked without any additional shopping. But…maybe on Thursday we’ll start a health cleansing fast challenge…I’ll keep you posted.
So here’s what we’re eating this week:
Breakfasts ~
- Pumpkin Scones
- German Pancakes
- French Toast
- Egg N Cheese Sandwiches x 2
- Scrambled Eggs N Ham
- Cereal and oranges
Lunch ~
- Bean burritos on homemade tortillas (hmmm – will have to think how to make these without oil – maybe butter?) x 2
- Egg Salad Sandwiches, veggie sticks, and apple sauce
- Leftovers x 2
- Cheese Sandwiches, veggie sticks, and apple sauce
- Taco Soup & biscuits
Dinners ~
- Homemade Pizza
- Ham & Bean Soup with Homemade Cornbread
- Turkey Divan, Green Beans, Salad
- Parmesan Garlic Chicken, Salad & Cauliflower
- Crockpot Apple Pork Roast (well, I don’t have the apples, but I do have a lot of apple sauce, so I’m giving this a try anyhow…), Corn, Salad
- Chicken Pot Pie (from my freezer)
- Tacos
