Well. Guess how many pictures I got of the food I made last week? Yup. A big fat ZERO. Oh well…I did a picture of the 15 POUNDS of food scrap waste we produced last week, though. Since it’s pretty unappetizing, I won’t put it on my menu plan.
This week we’re focusing on cleaning out the fridge and prepping snacks for our long road-trip to Florida. We have an awful lot of citrus still to eat and a bunch of eggs. So, here’s what I’m crafting around those items:
Breakfasts ~
- Cereal
- Citrus Smoothies, Toast
- French Toast
- Eggs & Bacon x 2
- Muffins & fruit x 2
Lunches ~
- Egg Salad Sandwiches
- Leftovers x 2
- Bean Burritos on homemade tortillas x 2
- Fruit, veggies, hard boiled eggs
Dinners ~
- Lasagna Bake
- Cream of Broccoli Soup, Cheesy Bread
- Layered Quesadillas, Rice and Guacamole
- Spaghetti with Marinara Sauce
- Crockpot Roast, Rice & Veggies
- Left-overs

We packed a lot of popcorn in ziplock snack bags. It kept them busy with eating, when they were bored all they wanted to do was snack. So they could eat all they want without filling up. Little raisin packs. I did a lot of single serving packs of things. It made it more fun for the kids, and easier for me to deal out! (or to pass back to Ava so she could pass them out.
Nice menus! You will be doing great to stay on track while getting ready for vacation. My week will be:
Monday – Superbowl Nachos (had a big dinner out Sunday night so carried over “nachos with the works” to Monday night)
Tuesday – rice and beef casserole – new recipe chosen by spouse (he cooks)
Wednesday – hamburgers
Thursday – I work to 9 pm and bring a brown bag supper; spouse fends for self
Friday – pizza – store-bought crust with our toppings
Saturday – make soup for lunches next week; make roast pork for sandwiches next week; have some of each!
Sunday – eggs for lunch (traditional for us) and dinner at parents’ place
