Weekly Menu / Freezer Cooking Plan ~ 6/11

The kids and I are heading to Missouri to spend a long weekend with my family on Thursday, so my menu will be short this week. I’m looking forward to the trip, but I have so much to do before then. Luckily, I’ve got quite a lot of food prepped already so this week’s menu shouldn’t be too hard to execute.

Here’s what we’re eating:

Breakfasts ~

  • Waffles (from extra batter from last week)
  • Egg & Cheese Sandwiches
  • Cereal (I broke down and bought 3 boxes of cereal last week. It’s been months since we’ve had any cereal. My kids are so thrilled!) :-)
  • Toast & Smoothies

Lunches ~

  • Bean burritos
  • Salad & Hard Boiled Eggs
  • Grilled Cheese

Dinners ~

  • Lemon Chicken Bake from Kiwi Magazine’s Allergy-Friendly Food for Families {watch for a giveaway for this cookbook soon!} – but I’m adapting the recipe for my crock pot, fresh peas & kale salad
  • Chicken Fajitas with left over chicken
  • Super Unhealthy Dinner at the Ballpark!

And that’s it! Super easy menu this week. I’m loving it!
