As you might be able to tell from my picture, the theme for this week’s menu is K.A.L.E. I have a ton of lovely kale in my garden that I do not want to waste so I’m trying to figure out how to incorporate it into all aspects of my menu this week.
Breakfasts ~
- Blueberry Scones (extra mixes for the freezer)
- German Pancakes w/ Buttermilk Syrup
- Egg Sandwiches
- Cold Cereal
- Yogurt Parfait
- Smoothies (yogurt, berries, & kale) & Toast
Standard Fair Lunches ~
- Bean Burritos on Homemade Tortillas (extra tortilla dough)
- Salads w. Hard Boiled Eggs
- Sandwiches (PB & J, Grilled Cheese w. Kale), Kale Chips
- Nachos
- Leftovers
Dinners ~
- The Pioneer Woman’s Sausage, Potato, & Kale Soup
- Tuscan Kale Salad with Grilled Steak & Veggies
- Taco Meat for a Crowd (extra for the freezer)
- Homemade Rotisserie Chicken with Kale Chips
- Homemade Pizza {Chicken & Kale} ~ Dough from freezer
- Pork Chops & Sauerkraut, Fresh Peas
- Beans & Rice, Guacamole

Your menu looks just scrumptious. I don’t know too much about gluten free eating, but I would eat anything on your yummy menu…. thursday looks great…. I love tortillas and anything you put on them!!!
