The. Best. Buttermilk Pancakes

Happy 4th of July! We started the day off with red and blue pancakes. They were fabulous, quick, and easy.

I adapted this recipe  from my BHG Prizewinning Recipes Cookbook. It’s one of my go-to cookbooks.

Buttermilk Pancakes
Recipe Type: Breakfast
Author: Better Homes & Gardens
Serves: 8
Ingredients
  • 3 1/2 cups flour (I used 2 cups freshly ground hard white wheat & 1 1/2 cups all-purpose. Normally I use all hard white wheat, but I’m out of berries.)
  • 4 TBS sugar (I use raw)
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs, lightly beaten
  • 3 cups buttermilk or sour milk
  • 6 TBS cooking oil
Instructions
  1. In a large bowl, stir together all of the dry ingredients.
  2. In another bowl, mix the wet ingredients.
  3. Add egg mixture all at once to flour mixture.
  4. Stir just until moistened – batter should still be lumpy.
  5. Cook over a a lightly greased griddle on medium heat until pancakes are golden brown.

 

I cook these on my cast iron griddle and serve with homemade buttermilk syrup. In honor of the 4th of July, we added strawberries and blueberries this morning. DELISH!

    Made this, this morning after seeing your post. SO GOOD. I did cut it in half. There,s only 3 of us. I also added vanilla and cinnamon. It’s just something my mother always did. This will be my pancake recipe from now on.

    • That’s funny. I doubled the recipe because I have so many mouths to feed. I love to freeze leftover pancakes too for quick meals! Glad you liked it, Michelle, and thanks for letting me know!!

  3. Now that’s a stack of pancakes!!! Looks delicious! Would definitely have to cut this recipe in half or the hubby and would be eating pancakes for days. :)

    • Haha, MJ! I gave that stack to my hubby! My kids eat me out of house and home so we had to make a bunch. There were a few left over and they were devoured cold as snacks when I wasn’t looking… ;-)
