I’ve got yellow squash and kale coming out of my ears now {in my garden and I’m trying to figure out what the heck to do with it all. The bummer is, I’m not all that crazy about yellow squash. I love zucchini – but for some reason, the squash is going crazy and the zucchini – not so much.
I’ve been on the hunt for squash recipes to make use of what we have and here’s what I’ve come up with for our weekly menu:

- Grilled Chicken and Squash Casserole with Bacon
- Chicken Brats & Kale Chips & German Cucumber Salad
- Homemade Pizza & Salad
- Chicken Enchiladas {from my freezer}

Haha. My garden has been spitting out tons of squash and zucchini too. I have been using it on kabobs, sauteing it with EVOO, garlic and onions and this week I am trying to saute it with butter and Parmesan (recipe I found in my Betty Crocker Cookbook). I asked my Facebook fans for ideas and I got lots of suggestions. You should check it out, maybe it will give you some additional ideas!

Visiting from Menu Plan Monday. The casserole with bacon would go over well in my home. Nothing beats a Southern squash casserole. I lost my recipe, though, sorry.
Please send me some of your yellow squash! I like it more than zucchini and cook it so many ways. You should check out my calabacitas enchiladas. They use yellow squash, corn and green chile. I also just posted a recipe that you could use yellow squash with. I love the sound of that squash casserole with bacon. YUM! Great menu for the week!

Been there done that. Take it from 2 southern gals in their 50′s. Been there for years. Best 2 tips. Par-boil before freezing will cut down on possible freezer burn. 2nd tip is recipe. May not be healthiest but, the kids will like it and it will use a lot of squash yellow or green. Large mixing bowl crumble in cornbread add some chopped up left-over chicken (white or dark or whatever). Add cooked squash (boiled squash, onion, salt, and pepper). Add a can of creama (creama is cream of something. chicken, mushroom, celery). Pour the glop into a greased or sprayed pyrex dish. Top with something that will give it crunch. Can be panko mix with a little EVOO, potato chips, or sliced blanched almonds. Put in oven @ 350 til its done. 45 minutes to an hour and 15 depending on size. Everything is already cooked so just get it hot and don’t burn the top basically. Not fancy but REAL southern cooking from 2 true southern women (1 mississippi, 1 alabama).
