
My sister’s kids came to visit with my mom last week and we really had a lot of fun. My kids tried to talk them into moving from Seattle to Iowa, and I think everyone liked the idea! They left this morning, though, and I’m not going to lie to you – I’m liking that it’s a little bit quieter around here.
But it was so nice having my mom here to share the cooking burden. She’s a great cook and loves to help out {read take over} in the kitchen. I never object! We had great food last week with a bunch of produce they brought from their big garden. And the best news, I have leftovers from their garden that we will continue to eat this week – which when combined with what I have in my garden means I won’t have to buy too much!
So, here’s what we’re eating. It’s a short week because we’ll be camping with the other side of the family Saturday-Monday.
Breakfasts ~
- Yogurt & berries
- Eggs & sausage
- Egg / Bagel sandwiches
- Toast & fruit
Lunches ~
- Beans & rice
- Salad & hard-boiled eggs
- PB & J
- Cheese sandwiches
- Leftovers
Dinners ~ Yay! Kids’ ballgames are done so dinner is easier again.
- Tacos & fixins
- Mushroom raviolis with sauteed veggies {from my dad’s garden}
- Fried potatoes {from my dad’s garden}, pork chops, sauteed cauliflower
- PF Chang’s lettuce wraps
- Whole wheat pasta with kale & fontina
- Black Bean Salad with Tomatoes & Avocados

It’s lovely to have guests but so nice when they leave. Sounds like everyone had a great time.
Our family loves tacos. My husband and son fry up the taco shells from corn tortillas. If you haven’t tried it they’re amazing.
