Weekly Menu / Freezer Cooking Plan 8/13

I was pretty busy in the kitchen this past week: canning, baking, freezing. My pantry and freezer are filling up nicely. I’ll share the details from my freezer cooking and canning sessions later this week, but right now I need to get my meal plan together! Here’s what I’m thinking for this week:

Breakfasts ~

  • Squash Muffins (extra for the freezer)
  • Blueberry Muffins (extra for the freezer)
  • Yogurt & Berries
  • Toast & Smoothies
  • Egg Sandwiches
  • Scones (extra packets for the freezer)

Lunches ~

  • Salads
  • PB & J Sandwiches
  • Left overs
  • Egg Salad Sandwiches
  • Pasta Salad & crusty bread
  • Black Bean Lasagna (from my last freezer meal exchange)

Dinners ~

  • Chicken Stir Fry (didn’t have this last week)
  • Cabbage & Ground Pork
  • At the Iowa State Fair
  • Homemade Pizza (extra pizza dough for the freezer)
  • Chicken Oreganto x 12 (Yes, you read that right! I’m participating in my monthly freezer meal exchange with 11 other moms! I hope there’s room in my freezer for everything.)
  • Steak Fajitas
  • Cheese & Broccoli Quiche

I’ll also be canning tomatoes & dill pickles. My grapes will be ready in the next week or so, so grape jelly is in my near future! And, I’d like to make granola and granola bars this week, too. We’ll see!

  1. Hi there, from MPM! I enjoyed seeing your menu. Your freezing approach is similar to mine and I have found freezer cooking to be a Godsend! The supper swap also sounds awesome, really wish I could find something like that here!

  2. I’m stopping by for a visit from Organizing Junkie today.
    It’s another 107 degree day in Las Vegas. Man! Am I looking forward to cooler temps. Unfortunately, we don’t usually start cooling down till late September or October.
    I’m looking forward to reading about your canning.
