My menu is late this week, but better late than never, eh? We got back from Missouri on Sunday night. I spent Monday running around picking up all of my groceries, and then I went out to my garden and found out my tomatoes are ripe and very abundant. I spent a solid hour picking them all and I’m not done yet!
This week I am concentrating on filling my pantry and freezer. I need quick breakfasts items for back2school and I have to process my tomatoes, broccoli, grapes, and the 20 lbs of organic apricots I got yesterday. Stay tuned for more info on that!
I try to plan my menu around what I need to freeze so I can just make extra and stick some in the freezer. Doing that enables me to kill two birds with one stone: feed my family AND fill my freezer!
So here’s what we’re eating this week.
Breakfasts ~
- Whole Wheat Waffles ~ extra for the freezer
- Eggy Breakfast Muffins ~ extra for the freezer
- German Pancakes
- Egg Sandwiches
- Smoothies & Toast
- Homemade granola ~huge batch
Lunches ~
- Kale salad & hard boiled eggs
- Beans & rice (extra beans for freezer, extra rice for stir fry)
- PB & J sandwiches
- BLTs
- Grilled Cheese
Dinners ~
- Lasagna Bake
- Cream of Broccoli & Bacon Soup {extra for the freezer}
- Grilled Chicken, Caprese Salad, Sauteed Broccoli
- Chicken Stir Fry
- Fajitas on homemade tortillas, fresh guacamole
- Taco Soup, homemade corn bread
- BKT Salad

Love those eggy breafast muffins! I kept sneaking into the freezer to grab one for a quick snack. The boys loved them too. Great way to use leftover veggies!
