The most awesome thing about this recipe is that I made it with corn I grew myself {Black Aztec Corn}, shelled myself, and ground myself! You can just start calling me the Little Red Hen… LOL!
You can use any cornmeal you want, but I’m going to share with you how I came to have freshly ground blue corn meal…Making this cornbread all started this past spring when I planted the Black Aztec Corn. It grew into beautiful corn…
This is some of the corn I harvested this summer. I picked the nicest ears to show you. A lot of it ended up a little misshapen, but it still works just fine!
After I harvested the corn {or maybe my husband did that part…} I used this awesome machine to get the kernels off the cobs {or maybe my husband and kids did that part, too. I can’t really remember now…} My in-laws brought this monster to me as a souvenir after their travels last summer. I love it and it soooo cracks me up that I got a souvenir in the first place, and second of all, that these are the types of souvenirs I get! I love this beast but I fear for my kids’ fingers. They are highly forbidden from touching it unless an adult is around.
Once it’s shelled, it looks like this!
I definitely ground it in my Nutrimill, {I do remember that part} and it looks like this! It’s so pretty! I’m in love with the blue cornmeal.
And this is a bunch more I have drying in my basement – Thanks to my husband who built this rack of corn AND hung it up.
Maybe he should be the Little Red Hen.
Anyhow, if you’d like to make this delicious cornbread yourself, here is the recipe:
Scrumptious {Blue} Cornbread
- 1 cup flour {I use freshly ground hard white wheat}
- 1 cup cornmeal {I use freshly ground blue cornmeal}
- 3 TBS sugar
- 1 TBS baking powder
- 1 tsp salt
- 1 TBS butter
- 2 eggs, beaten
- 1 cup milk
- 1/4 cup melted butter
- Preheat over to 400F. In a medium bowl, stir together flour, cornmeal, sugar, baking powder, and salt. Set aside.
- Melt 1 TBS butter in a round cast iron skillet.
- In a small bowl, combine eggs, milk, and butter. Add to the flour mixture and stir until just mixed.
- Pour into the hot skillet and bake for 15-20 minutes.
- Cut into wedges and serve with butter and/or honey.
- Enjoy!
Enjoy!

Oh my! The whole growing and grinding thing is far beyond anything I’ve ever done and I think it’s awesome. What a fun and educational process to do with your family.
Thanks, Janel! It was a lot of fun.
This looks amazing
