If you’re looking for a really delicious, yet surprisingly simple meal, this post is for you. All you need is a whole chicken, some veggies, seasonings and oil. Oh – and a nice dutch oven is a huge help. Here’s a recipe for a delicious roast chicken meal – a one pot wonder – dump, bake, eat, enjoy.
This is a great meal for a good ole fashioned Sunday dinner or something easy to prepare when you need a good meal with little prep.
- 1 Whole chicken
- 4-5 potatoes, scrubbed, peeled, cut into large chunks
- 4-5 large carrots, scrubbed, peeled, cut into large chunks
- 1 onion, cut into large chunks {if you want}
- 1/4 cup olive oil
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt & pepper to taste
- Preheat oven to 425 degrees.
- Wash and pat dry the chicken. Make sure you remove any organs or gizzards from the inside, if there are any.
- Put your chicken in a large dutch oven.
- Add the veggies.
- Add the olive oil {with Rachel Ray flair} and seasonings.
- Cover your dutch oven and cook until meat thermometer (inserted near the inner thigh) registers 165 internal temperature, about 1 1/2 hours for a larger chicken.
- Enjoy!
I have roasted chickens in pampered chef stoneware in the past, and I’ve also cooked them often in my crop pot, but my new most favorite pot in the whole wide world,the Le Creuset 7-1/4-Quart Dutch Oven I recently splurged on, wins the prize for most delicious roast chicken! I really credit the pot for the crispy on the outside, yet moist on the inside chicken, and the really, really nicely roasted veggies. We were all very impressed with this meal. I highly recommend giving it a try.

There is nothing like a good old fashioned roast chicken, and your recipes sounds delicious. I have a Le Creuset Dutch Oven as well, and I must admit it really does a beautiful job of chicken!
