The idea of cooking a hot breakfast on busy mornings sounds daunting. Who has that kind of time? Because let’s just get real, mornings are plain busy. But, given the choice, would you choose a real, hot breakfast {think bacon and eggs} or a bowl of cold cereal in the morning? I know what I’d rather have!

5 minute egg and cheese sandwich with bacon, spinach and avocado - in not too much longer than it takes to pour a bowl of cereal, make yourself a real breakfast instead!

I’ve got just the recipe that will help you enjoy that hot breakfast! You can even make it on busy mornings: the 5 minute breakfast sandwich – loaded with healthy ingredients like eggs, cheese, bacon, spinach & avocado. Seriously folks, in just about FIVE minutes, you, too, can have a healthy, nutritious breakfast on your plate!

Why opt for a homemade breakfast? Well, despite the fact that breakfast cereal is expensive and not very healthy, it also doesn’t fill me up for very long. I like to start my mornings out right – and a nutritious meal is a great way to start the day. Quick recipes rule in my world – so this recipe for a quick egg sandwich has recently become one of my favorite breakfasts! Give it a try! You won’t be disappointed.

5 Minute Egg & Cheese Sandwich {with bacon, spinach & avocado}

5 minute breakfast sandwich

Start with a hearty homemade bread, if you can. {Just make sure you don’t have to bake it first or this recipe will take much longer than 5 minutes.} I love this Whole Wheat Potato Bread and Homemade 9 Grain Bread is also one of my favorite bread recipes. I bake my bread 5 loaves at a time and then freeze it to facilitate quick meals like this.

Bacon is definitely the bottle neck of this recipe. I recommend that you start with pre-cooked bacon. Did you know you can fry it up ahead of time and freeze it? {If you don’t have pre-cooked bacon, add 5-8 more minutes to the total recipe time.} If you have precooked bacon, pop it a frying pan and heat it up.

Then toast the bread. Once the bacon is warm, drain some of the bacon grease into a container to save for another day and fry the eggs right in that yummy bacon grease! I like my fried eggs over medium/hardish and cooking them in bacon grease means you can eat less bacon if you want to save on some calories.

Butter the toast and put a few pieces of organic spinach on it. Slice a nice chunk of cheese – my fave is Tillamook Vintage White Extra-Sharp Cheddar Cheese {which I usually buy at Costco}.

Stack the bacon on the spinach, the cheese on the bacon, and put the egg on top. Sprinkle with salt and freshly ground pepper to taste, and enjoy with a few slices of fresh avocado.

Ingredients

  • 4 thick slices of bread
  • 4 eggs
  • Handful organic spinach
  • 4 slices cheese - whatever kind you like
  • 4 slices precooked nitrate-free bacon
  • 1 avocado, sliced
  • Salt and pepper to taste

Instructions

  1. Toast and butter bread.
  2. Warm up the precooked bacon on medium high heat , drain off some of the bacon grease and then cook eggs right in the leftover bacon grease.
  3. Layer spinach, bacon, cheese, eggs and enjoy with salt and pepper to taste and avocado slices.

  1. Deviled eggs. It sounds obvious but that’s what they like best. They were requesting them so often I had to cut them back to only Holidays. That started an argument about what exactly was a holiday. So in the end we all decided to make them at least once a month (but they wouldn’t mind having them twice) and I’m expected to make enough for Leftovers 😉

  3. I’ve been making a crustless quiche for the past year since being diagnosed with diabetes. I make it every week and eat leftovers inbetween. Good stuff! Breakfast is by far my favorite meal. I will try this sandwich soon. Gotta look up your bread recipes.

  5. I love egg salad and omelets, especially little hand held ones for the kiddos. We bake them in muffin tins and let the kiddos put in their favorite add-ins.

  6. We love eggs at our house. We like breakfast for supper about once a week (eggs, pancakes or french toast, sausage or bacon, etc). I also do a lot of baking so I use a lot of eggs in baked goods recipes.

  9. I love something like your sandwich (although mine are quite a bit simpler, although not as yummy-looking!) I fry an egg over medium and put it on a piece of toast (or toasted buns) with a slice of cheese and a dollop of strawberry preserves. Messy and yummy!

  11. I love to make Quiche with eggs! I am a vegetarian, so I make and eat a lot of eggs, but quiche is a weekly favorite recipe for me!

  12. My favorite is to make vanilla pudding. I don’t always use a recipe, but I like to use the freshest ingredients, that is why I like Eggland’s eggs. Vanilla, cornstarch, milk, and eggs. We like it warm and cold. Soooo good.
