Menu & Freezer Cooking Plan 8/15

As seems to be normal for me, we did not eat everything on the menu last week. I also didn’t get as much in the freezer as I had hoped. I only made one Italian Zucchini Pie and we ate almost all the bread, so I’m going to have to bake this week again. It seems we’re eating more and more around here as the kids get older. They’ve always been good eaters, but my word. They can devour 5 pounds of fruit in one day. !

Here’s the plan this week:

Breakfasts:
Muffins – extra mix for the freezer
French Toast
German Pancakes with homemade buttermilk syrup
Cereal
Yogurt and granola
Cinnamon Zucchini Waffles (from the freezer)
Scones – extra mix for the freezer

Lunches:
PB & J
Subway – A & C were top readers for the summer reading program and won free Subs!
Cheesy noodles, sliced veggies
Crackers & Hummus, veggies, fruit
Tuna sandwiches
Bean Burritos
Homemade Tomato Soup & Grilled Cheese

Dinners:
Buttery Zucchini & Ground Beef, No Mayo Cole Slaw
Layered Chicken Quesadillas (with left over grilled chicken)
Crockpot Sausage and Cabbage, fried potatoes
Tacos (extra meat for the freezer) on homemade tortillas (dough from my freezer)
Pesto chicken pasta (extra pesto for the freezer)
Crockpot Pork Ribs & homemade baked beans (extra beans for the freezer)
Homemade Mediterranean Pizza (thanks for the idea, Cara!), Greek Salad (extra pizza dough for the freezer)

Extras: Granola! And, it’s time to can tomatoes. I don’t have a lot, but I have a big enough batch right now to make a bit. I’m pondering spaghetti sauce this year. Have any of you ever canned spaghetti sauce?

    When my mom doesn’t have enough tomatoes to make TONS of her pasta sauce, she makes fresh summer salsa and cans it!! I claim 1/2 of her batch every year, it is the best salsa ever! And much cheaper than buying the fresh salsas at the store. People encouraged her to cook the salsa before canning it this year… Boo! Bad call. Not nearly as good. I like it fresh!!

      She cans fresh salsa?? I didn’t know you could do that. I’ve always cooked it first once. I’ve only canned it twice, though. The first time, we really like it. The second time, not so much (I’ve still got uneaten jars…) I like the not so good stuff for cooking but not really for eating. Thanks for the idea. I might give it a shot! :-)
