Weekly Menu / Freezer Cooking Plan 1/30

Highlights from last week:

This week is the end of my Eat From the Pantry Challenge. I’m still trying to keep expenses down for the first part of the month, but I will have to stock up on a few things as we are out of a lot. I’m very proud to have eaten a lot of the stuff that was lingering in my freezer, but I’m looking forward to adding a few more items to my pantry / freezer! Stingtown Grocery (an Amish bulk food store), here I come!

Here’s what we’re eating this week:

Breakfasts ~

Lunches ~

  • Cucumber Sandwiches
  • Egg Salad Sandwiches
  • Bean Burritos (on homemade tortillas)
  • PB & J
  • Leftovers x 2

Dinners ~

  • Homemade Pizza (extra dough for the freezer)
  • Crockpot Apple Pork Roast (didn’t have this last week)
  • Bean Soup with Ham & Cornbread (didn’t have this last week either)
  • Grilled Steak Gyros with Pita & Hummus (might make homemade pita and hummus if I get really ambitious)
  • Grilled Chicken with Roasted Veggie Medley
  • Lasagna
  • Finger Food for the Super Bowl

    We are having a skewer and kabbob fest for the superbowl. Everyone brings their favorite kabbob, and I’ll be making chicken skewers. Maybe some Pico and chips as well…

    Make the pita! You and the kids will have fun – it’s actually really easy! Just pulled a batch of your Eggy Breakfast Muffins out of the oven – love them!
