Weekly Menu / Freezer Cooking Plan ~ 6/4 ~ Kale Edition

As you might be able to tell from my picture, the theme for this week’s menu is K.A.L.E. I have a ton of lovely kale in my garden that I do not want to waste so I’m trying to figure out how to incorporate it into all aspects of my menu this week.

Breakfasts ~

  • Blueberry Scones (extra mixes for the freezer)
  • German Pancakes w/ Buttermilk Syrup
  • Egg Sandwiches
  • Cold Cereal
  • Yogurt Parfait
  • Smoothies (yogurt, berries, & kale) & Toast

Standard Fair Lunches ~

  • Bean Burritos on Homemade Tortillas (extra tortilla dough)
  • Salads w. Hard Boiled Eggs
  • Sandwiches (PB & J, Grilled Cheese w. Kale), Kale Chips
  • Nachos
  • Leftovers

Dinners ~

    • I'm also excited about that tilapia. I included a different tilapia recipes on my Feb menu plan and is was really, really good! Enjoy the German Pancakes. They have been a long time favorite at my house. :-)
    • Thanks, Jenny. This is the third month for this this new menu format and it really is helping me out a lot. Can't wait to try your unstuffed peppers. Love that idea since I don't have fresh peppers in my garden right now. :-)
